Prepare the Marinade
In a bowl, mix together the soy sauce, brown sugar, minced garlic, and grated ginger to create the marinade.

Marinate the Chicken
Place the chicken breasts in a resealable bag or bowl and pour the marinade over them. Make sure the chicken is well coated. Seal and refrigerate for at least 30 minutes, preferably 2 hours.

Cook the Chicken
In a large skillet, heat the vegetable oil over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and add to the skillet. Cook the chicken for about 5-7 minutes on each side until browned and cooked through. Remove the chicken and set aside.

Add Pineapple
In the same skillet, add the reserved marinade along with the pineapple chunks. Bring to a boil, then reduce to a simmer for about 5 minutes.

Combine and Serve
Return the chicken to the skillet and coat with the pineapple sauce. Cook for an additional 2-3 minutes. Garnish with chopped green onions, season with salt and pepper to taste, and serve.
