    Prepare the Potatoes

    Wash the red bliss potatoes thoroughly to remove any dirt. Cut them into quarters or bite-sized pieces, leaving the skins on for texture and flavor.

    In a large pot, bring water to a boil. Add the quartered potatoes to the boiling water and cook for about 15-20 minutes, or until they are fork-tender. Be careful not to overcook them.

    Once the potatoes are cooked, drain them in a colander and let them cool for about 30 minutes.

Making the Dressing
