Preparing the Grilled Chicken
1. Marinate the Chicken
In a large bowl, combine the olive oil, garlic powder, paprika, salt, and black pepper. Add the chicken breasts and coat them evenly. Cover and marinate for at least 30 minutes, or overnight in the refrigerator for better flavor.
2. Grill the Chicken
Preheat the grill to medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for 5 minutes before slicing.
Making the Caesar Dressing
3. Combine Dressing Ingredients
In a medium bowl, whisk together the mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, anchovy paste, salt, and black pepper until smooth and creamy. Adjust seasoning to taste.
Assembling the Salad
4. Prepare Salad Base
In a large serving bowl, chop the romaine lettuce into bite-sized pieces. Add the cherry tomatoes (halved) and sliced cucumber.
5. Add Chicken and Dressing
Slice the grilled chicken and arrange it on top of the salad. Drizzle the Caesar dressing over the salad and toss gently to combine.
6. Finish with Toppings
Sprinkle the Parmesan cheese and croutons over the top of the salad. Serve immediately.
