Making the Pancake Batter

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

Combine Wet and Dry Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Cooking the Pancakes

Preheat the Griddle
Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

Pour Batter for Mickey Mouse Shape
Pour a large circle of batter onto the griddle for the head (about 4 inches in diameter). Then pour two smaller circles (about 2 inches in diameter) for the ears.

While the batter is still wet, sprinkle chocolate chips over the pancake, especially on the face area.

Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown.

Remove the pancakes from the griddle and repeat the process with the remaining batter.
