    Prepare the stuffing

    In a skillet, melt 4 tablespoons of butter over medium heat. Add the finely chopped onion, celery, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.

    Combine stuffing ingredients

    In a large bowl, combine the sautéed mixture with clam meat, crabmeat, breadcrumbs, chopped parsley, salt, and black pepper. Mix well until all ingredients are combined.

    Stuff the haddock

    Preheat your oven to 350°F (175°C). Take the haddock fillets and place them in a baking dish. Generously stuff each fillet with the clam and crabmeat stuffing.

White Sauce Preparation

    Make the white sauce

    In a saucepan, melt 4 tablespoons of butter over medium heat. Stir in the flour and cook for 2 minutes until bubbly but not browned. Gradually whisk in the milk, ensuring no lumps form.

    Season the sauce

    Continue to cook the sauce, whisking frequently, until it thickens and coats the back of a spoon, about 5-7 minutes. Season with salt, black pepper, and a pinch of nutmeg.

Baking

    Combine and bake

    Pour the prepared white sauce over the stuffed haddock in the baking dish. Bake in the preheated oven for 20-25 minutes or until the haddock is opaque and flakes easily with a fork.
