    Slice the Onions

    Peel the sweet onions and slice them into 0.5-inch thick rings. Carefully separate the rings and set them aside.

    Prepare the Batter

    In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water while whisking until the batter is smooth and slightly thick.

Frying

    Heat the Oil

    In a large deep pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into the oil; if it sizzles and rises, it's ready.

    Coat and Fry the Onion Rings

    Dip each onion ring into the batter, allowing the excess to drip off. Carefully place the battered onion rings into the hot oil, frying in batches to avoid overcrowding. Fry for 2-3 minutes on each side or until golden brown and crispy.

    Drain and Season

    Once fried, remove the onion rings using a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Season with additional salt if desired.
