Marinating the Chicken

Prepare the Marinade
In a large bowl, combine buttermilk and hot sauce. Whisk until well mixed.

Marinate the Chicken
Add the chicken pieces to the buttermilk mixture. Ensure all pieces are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

Mix the Seasoned Flour
In a separate large bowl, combine all-purpose flour, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Mix well until fully combined.
Frying the Chicken

Heat the Oil
In a large deep fryer or heavy pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Coat the Chicken
Remove the marinated chicken from the refrigerator. Dredge each piece in the seasoned flour, shaking off any excess.

Fry the Chicken
Carefully place the coated chicken pieces in the hot oil, ensuring not to overcrowd the fryer. Fry in batches for about 12-15 minutes or until golden brown and the internal temperature reaches 165°F (74°C).

Once cooked, remove the chicken pieces from the oil and place them on a wire rack or paper towels to drain excess oil.
