1. Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Stir until evenly mixed.

2. Cut in Butter

Add the unsalted butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

3. Add Water

Gradually add the cold water, one tablespoon at a time, mixing gently until the dough comes together. Avoid overworking the dough.

4. Chill Dough

Divide the dough into two equal portions, wrap in plastic wrap, and refrigerate for at least 1 hour before rolling out.

5. Prepare Apples

Peel, core, and slice the apples into thin pieces. Place them into a large mixing bowl.

6. Combine Ingredients

Add the granulated sugar, cinnamon, nutmeg, lemon juice, and cornstarch to the sliced apples. Toss gently until the apples are well coated.

7. Let Filling Rest

Allow the filling to sit for about 10 minutes, which will help to draw out moisture from the apples.

Assembly and Baking

8. Preheat Oven

Preheat your oven to 425°F (220°C).

9. Roll Out Dough

On a lightly floured surface, roll out one portion of the chilled dough to fit your pie dish. Place it in the dish and trim any excess hanging over the edges.

11. Top with Second Crust
