Haddock Preparation

Prepare the Haddock
Season the haddock fillets with salt and black pepper on both sides.

Dredge the Fillets
Set up a dredging station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Dip each fillet first in flour, then in the egg, and finally coat it with breadcrumbs.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it’s hot but not smoking.

Fry the Fillets
Carefully place the breaded fillets in the hot oil. Fry for about 3-4 minutes on each side or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Stuff the Haddock
If desired, make a pocket in the center of each fried haddock fillet and stuff with the clam and garlic mixture. Alternatively, serve the stuffing on the side.
