Preparing the Salad Base

In a large bowl, wash the romaine lettuce, spinach, and arugula thoroughly under cold running water. Use a salad spinner or clean kitchen towel to dry the greens completely.

Tear the romaine lettuce into bite-sized pieces and add it to the bowl with the spinach and arugula. Gently toss to combine.

Slice the cherry tomatoes in half, chop the cucumber into bite-sized cubes, and dice the red bell pepper into small pieces. Thinly slice the red onion.

Add the chopped cherry tomatoes, cucumber, red bell pepper, and red onion to the bowl with the greens. Toss gently to combine.

Sprinkle the feta cheese, olives, and sunflower seeds over the salad mixture. Gently toss the salad to distribute the toppings evenly.
Making the Dressing

In a small jar or bowl, combine the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper. Whisk or shake well until the dressing is emulsified.
