    In a large mixing bowl, combine the flour, sugar, and salt. Add the chilled, cubed butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Gradually add ice water, one tablespoon at a time, mixing until the dough holds together but is not sticky. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.

Fruit Filling Preparation

    Prepare the Fruit

    Wash, peel (if necessary), and chop the fruit. Place it in a large bowl.

    Mix with Sugar and Spices

    Add granulated sugar, cornstarch, lemon juice, cinnamon, and nutmeg to the fruit. Toss to coat evenly.

Cream Filling Preparation

    Whip the Cream

    In a large bowl, beat the heavy cream, granulated sugar, and vanilla extract with an electric mixer until soft peaks form.

    If using gelatin, dissolve it in milk and let it cool slightly before folding it into the whipped cream. Gently mix until fully incorporated.

Assembling the Pie
