    Prepare the Seafood

    Rinse the haddock fillets, scallops, clams, and shrimp under cold water. Pat them dry with paper towels. Cut the haddock into bite-sized pieces.

    Make the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until the batter is smooth and has a thick consistency.

    Heat the Oil

    In a large deep frying pot or skillet, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, the oil is ready.

    Fry the Seafood

    Dip each piece of haddock, scallops, clams, and shrimp into the batter, ensuring they are fully coated. Carefully drop them into the hot oil in batches, making sure not to overcrowd the pot. Fry for about 3-4 minutes or until golden brown and crispy. Use a slotted spoon to remove the fried seafood and place it on a plate lined with paper towels to drain excess oil.
