Boil the Eggs
Place the large eggs in a saucepan and cover with water. Bring to a boil over medium-high heat. Once boiling, cover the pan and remove it from heat. Let the eggs sit, covered, for 12-14 minutes.

Peel the Eggs
Once cooled, gently tap each egg on a hard surface and roll it to crack the shell. Peel the eggs under running cold water to help remove the shells more easily.
Filling Preparation

Prepare the Filling
Slice each peeled egg in half lengthwise. Remove the yolks and place them in a mixing bowl. Add the mayonnaise, Dijon mustard, white vinegar, salt, black pepper, and paprika to the bowl with the yolks.

Mix the Filling
Using a fork or a hand mixer, mash and mix the yolk mixture until smooth and creamy. If desired, finely chop chives and fold them into the mixture for added flavor.
Assembly

Fill the Eggs
Using a spoon or a piping bag, carefully fill the hollowed-out egg whites with the yolk mixture. Be generous with the filling for a delicious bite!

Garnish and Serve
Sprinkle the filled deviled eggs with additional paprika and garnish with extra chives if desired. Arrange them on a serving platter and serve chilled.
