    Sauté Vegetables

    In a large pot or Dutch oven, heat olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until softened, about 5 minutes.

    Add Garlic and Carrots

    Stir in the minced garlic and diced carrots, cooking for an additional 3 minutes until fragrant.

Cooking the Chili

    Combine Ingredients

    Add the canned diced tomatoes, kidney beans, black beans, and corn to the pot. Stir to combine all ingredients.

    Season the Chili

    Add the chili powder, cumin, paprika, salt, black pepper, cayenne pepper, and bay leaves. Mix well to ensure the spices are evenly distributed.

    Simmer the Chili

    Bring the mixture to a boil, then reduce heat to low. Cover and let simmer for 30-40 minutes, stirring occasionally to prevent sticking.

Serving
