Soak the Beans
Rinse and sort the dried navy beans. Place them in a large bowl, cover with water, and soak overnight or for at least 8 hours. Drain and rinse before cooking.

Cook the Beans
In a large pot, cover the soaked beans with fresh water. Bring to a boil, then reduce heat and simmer for 1-1.5 hours or until beans are tender. Drain and set aside.
Making the Sauce

Cook the Bacon
In a large skillet over medium heat, cook the bacon until crispy. Remove from pan, crumble, and set aside, keeping the bacon fat in the skillet.

Mix the Sauce
In a large mixing bowl, combine the cooked bacon, sautéed onions, brown sugar, ketchup, mustard, apple cider vinegar, salt, black pepper, and garlic powder. Stir until well combined.
Baking

Combine and Bake
Preheat the oven to 350°F (175°C). In a large baking dish, combine the cooked beans with the sauce mixture. Stir to mix well. Cover with aluminum foil and bake for 1 hour.

Add Toppings
Remove the foil, sprinkle shredded cheddar cheese over the top, and bake uncovered for an additional 15 minutes, or until the cheese is melted and bubbly.

Garnish and Serve
Remove from the oven, sprinkle with chopped parsley for garnish, and serve hot.
