    Prepare the Pork

    Preheat your smoker to 225°F (107°C).

    Rub the pork shoulder with salt and black pepper. Place it in the smoker and smoke for about 6-8 hours or until the internal temperature reaches 195°F (90°C).

    Make the BBQ Sauce

    In a saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, and black pepper. Bring to a simmer over medium heat and cook for 15-20 minutes, stirring occasionally.

    Adjust seasoning with salt to taste.

    Prepare the Cabbage Slaw

    In a bowl, mix shredded cabbage with a pinch of salt and let it sit for 10 minutes. Drain excess water and toss with your favorite dressing (optional).

    Assemble the Sandwich

    Shred the smoked pork shoulder and toss it with the BBQ sauce. Place a generous amount of pulled pork on a brioche roll, top with cabbage slaw and pickles.
