Prepare the Pulled Pork
In a bowl, mix together smoked paprika, brown sugar, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Rub this spice mixture all over the pork shoulder and let it marinate for at least 2 hours, preferably overnight.

Cook the Pork
Place the pork shoulder in a smoker or slow cooker. Add apple cider vinegar and water. Cook for about 8 hours at 225°F (or on low in a slow cooker) until the pork is tender and easily shredded.

Make the Pickled Red Onion
Thinly slice the red onion and place it in a jar. In a small saucepan, combine apple cider vinegar, sugar, and salt. Bring to a simmer and pour over the onions. Let them sit for at least 30 minutes before serving.

Prepare the Spicy Mayo
In a bowl, mix mayonnaise, Sriracha sauce, and lime juice until well combined. Adjust the heat level by adding more Sriracha if desired.

Assemble the Tacos
Shred the cooked pork and serve with pickled red onions, cilantro, lime wedges, grilled tortillas, and spicy mayo. Enjoy building your own tacos!
