Method

Cooking Instructions

  1. 1

    Prepare the Potatoes

Peel and chop the potatoes into even chunks. Boil in salted water until tender, about 15-20 minutes.

  2. 2

    Mash the Potatoes

Drain the potatoes and return to the pot. Add butter, heavy cream, minced garlic (2 cloves), salt and pepper. Mash until creamy and smooth. Set aside.

  3. 3

    Prepare the Broccolini

Trim the ends of the broccolini and blanch in boiling water for 2-3 minutes, then transfer to ice water to stop cooking. Sauté in olive oil with minced garlic (2 cloves) for 3-4 minutes. Season with salt and pepper.

  4. 4

    Cook the Steak

Season the strip steak generously with salt and pepper. Heat a skillet over high heat and add a drizzle of olive oil. Sear the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness.

  5. 5

    Make the Red Wine Demi-Glace

In the same skillet, add red wine and beef broth. Bring to a simmer, scraping up any brown bits from the bottom of the pan. Reduce until thickened, about 5-10 minutes. Season with salt and pepper.

  6. 6

    Serve

Plate the steak with garlic mashed potatoes and sautéed broccolini. Drizzle red wine demi-glace over the steak.
