Fries

Method

Prepare the Fries

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Cut the Sweet Potatoes

Peel and cut the sweet potatoes into fries, about 1/4 inch thick.

  3. 3

    Season the Fries

In a large bowl, toss the sweet potato fries with olive oil, salt, black pepper, and paprika until evenly coated.

  4. 4

    Bake the Fries

Spread the fries in a single layer on a baking sheet. Bake for 25-30 minutes or until they are crispy, flipping halfway through.

Prepare the Brisket

  1. 5

    Heat the Brisket

If your smoked brisket is cold, slice it and heat it gently in a skillet over medium heat. Add the beef broth and barbecue sauce, stirring until warmed through.

Make the Gravy

  1. 6

    Melt the Butter

In a medium saucepan, melt the butter over medium heat.

  2. 7

    Add the Flour

Once melted, whisk in the flour and cook for about 1 minute until it forms a paste.

  3. 8

    Add Broth and Season

Slowly whisk in the beef broth, continuing to stir until the gravy thickens. Season with salt and black pepper.

Assemble the Poutine

  1. 9

    Layer the Fries

On a serving plate, layer the baked sweet potato fries.

  2. 10

    Add the Brisket

Top the fries with the heated smoked brisket.

  3. 11

    Pour the Gravy

Generously smother the brisket and fries with the beef gravy.

  4. 12

    Add Toppings

Finally, top with white cheddar cheese curds, sliced green onions, and diced tomatoes.
