Chicken Preparation

Prepare the Chicken
Season the 8-ounce chicken breast with salt and black pepper on both sides.

Cook the Chicken
In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add the seasoned chicken breast and cook for 6-7 minutes on each side until it reaches an internal temperature of 165°F (75°C).

Glaze with Red Pepper Jam
In the last minute of cooking, spoon 1 tablespoon of red pepper jam over the chicken breast and let it caramelize slightly.

Prepare the Vegetables
Slice the red and yellow bell peppers and the onion into thin strips.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced peppers and onions and sauté for 5-7 minutes until they are softened and slightly caramelized. Season with salt and black pepper to taste.

Once the chicken is cooked and glazed, place the chicken breast on a serving plate and top it with the sautéed peppers and onions.
