Chocolate Cups
Peanut Butter Filling
Method
Prepare Chocolate Cups
- 1
Melt the Chocolate
In a microwave-safe bowl, add the semi-sweet chocolate chips. Microwave in 30-second intervals, stirring between each interval until the chocolate is completely melted and smooth.
- 2
Mold the Chocolate Cups
Using a silicone muffin mold or mini cupcake liners, spoon about 1 tablespoon of the melted chocolate into each cup, making sure to cover the bottom and sides. Place the mold in the freezer for about 10 minutes to harden.
Prepare Peanut Butter Filling
- 3
Mix the Filling
In a medium bowl, combine the creamy peanut butter, powdered sugar, vanilla extract, and a pinch of salt. Use a hand mixer or a spatula to mix until smooth and well combined.
Assemble the Peanut Butter Cups
- 4
Fill the Chocolate Cups
Remove the hardened chocolate cups from the freezer. Spoon about 1 tablespoon of the peanut butter filling into each cup, smoothing it out evenly.
- 5
Top with Remaining Chocolate
Reheat the remaining melted chocolate if necessary. Spoon a layer of melted chocolate over the peanut butter filling in each cup, ensuring the filling is completely covered.
- 6
Chill
Return the filled cups to the freezer for another 15-20 minutes, or until the chocolate is completely set.
