Lasagna Filling

    Cook the Sausage

    In a skillet over medium heat, cook the ground Italian sausage until browned and cooked through. Drain excess fat and set aside.

    Mix Filling Ingredients

    In a large bowl, combine the cooked sausage, ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, chopped basil, minced garlic, salt, and black pepper. Mix well until all ingredients are combined.

Lasagna Bites Assembly

    Prepare the Lasagna Sheets

    Cut each cooked lasagna noodle in half to create smaller pieces suitable for bite-sized portions.

    Fill the Lasagna Noodles

    Place a spoonful of the filling mixture onto one half of a lasagna noodle. Fold the noodle over to create a pocket. Repeat with remaining noodles and filling.

    Coat the Bites

    Set up a breading station. Place flour in one bowl, beaten eggs in another, and breadcrumbs in a third. Dip each lasagna bite first in flour, then in egg, and finally coat with breadcrumbs.

Frying and Marinara Sauce

    Fry the Lasagna Bites

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Fry the lasagna bites in batches, about 3-4 minutes or until golden brown. Remove and drain on paper towels.

    Make the Marinara Sauce

    In a saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until soft. Stir in crushed tomatoes, oregano, salt, black pepper, and simmer for 20 minutes. Stir in fresh basil before serving.
