Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate using a double boiler or in the microwave (30-second intervals, stirring in between) until smooth. Let it cool slightly.

Whip the Cream
In a separate bowl, pour the heavy cream and add the vanilla extract. Using an electric mixer, whip the cream until soft peaks form. Be careful not to overwhip; set aside.

Beat the Egg Whites
In a clean bowl, whisk the egg whites with a pinch of salt until foamy. Gradually add the granulated sugar while continuing to whisk until stiff peaks form. The egg whites should be glossy and hold their shape.

Combine Ingredients
Once the chocolate has cooled, fold the whipped cream into the melted chocolate gently until well combined. Then, fold in the beaten egg whites in three additions, being careful not to deflate the mixture.

Chill the Mousse
Spoon the mousse into individual serving dishes or a large bowl. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.
