Ravioli Preparation

  1. 1

    Make the Filling

In a mixing bowl, combine ricotta, mozzarella, parmesan, basil, minced garlic, salt, and black pepper. Mix until well combined. Set aside.

  2. 2

    Prepare the Dough

On a clean surface, make a mound with flour and create a well in the center. Add eggs and a pinch of salt into the well. Gradually incorporate flour into the eggs using a fork until a dough forms. Knead for 8-10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

  3. 3

    Roll Out the Dough

Divide the dough into four parts. Roll out each part into thin sheets using a pasta machine or rolling pin, dusting with flour to prevent sticking.

  4. 4

    Assemble the Ravioli

Place a teaspoon of filling onto one sheet of dough, spacing them about 2 inches apart. Moisten the edges with water, then fold the dough over to create a pocket. Press to seal and cut out the ravioli using a pasta cutter.

  5. 5

    Cook the Ravioli

Bring a large pot of salted water to a boil. Cook the ravioli in batches for 3-4 minutes or until they float to the surface. Remove with a slotted spoon and transfer to a plate.
