    Prepare the Corn Mixture

    In a blender, combine the fresh corn kernels, heavy cream, milk, granulated sugar, egg yolks, vanilla extract, and a pinch of salt. Blend until smooth.

    Strain the Mixture

    Pour the blended mixture through a fine-mesh sieve into a bowl to remove any solids. Use a spatula to press the mixture through for maximum yield.

    Preheat the Oven

    Preheat your oven to 325°F (160°C).

    Prepare Ramekins

    Grease 4 ramekins with butter and place them in a baking dish.

    Fill Ramekins

    Divide the strained corn mixture evenly among the prepared ramekins.

    Bake in a Water Bath

    Carefully pour hot water into the baking dish around the ramekins until it reaches halfway up the sides. Bake for 30-35 minutes, or until the custard is set but still slightly jiggly in the center.

    Cool and Chill

    Remove the ramekins from the water bath and let them cool. Then, refrigerate for at least 2 hours, or until completely chilled.

    Caramelize the Top

    Before serving, sprinkle a thin layer of brown sugar on top of each custard. Using a kitchen torch, caramelize the sugar until bubbly and golden. If you don't have a torch, broil in the oven for a few minutes, watching closely to avoid burning.
