Prepare the Corn Mixture
In a blender, combine the fresh corn kernels, heavy cream, milk, granulated sugar, egg yolks, vanilla extract, and a pinch of salt. Blend until smooth.

Strain the Mixture
Pour the blended mixture through a fine-mesh sieve into a bowl to remove any solids. Use a spatula to press the mixture through for maximum yield.

Preheat the Oven
Preheat your oven to 325°F (160°C).

Fill Ramekins
Divide the strained corn mixture evenly among the prepared ramekins.

Bake in a Water Bath
Carefully pour hot water into the baking dish around the ramekins until it reaches halfway up the sides. Bake for 30-35 minutes, or until the custard is set but still slightly jiggly in the center.

Remove the ramekins from the water bath and let them cool. Then, refrigerate for at least 2 hours, or until completely chilled.
