Method

Preparation

  1. 1

    Prepare the Potatoes

Wash and peel the Russet potatoes. Cut them into thin strips, about 1/8 inch thick, to create shoestring fries.

  2. 2

    Soak the Potatoes

Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch.

  3. 3

    Dry the Potatoes

Drain the soaked potatoes and pat them dry with a clean kitchen towel. This step is crucial to achieve crispy fries.

  4. 4

    Heat the Oil

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  5. 5

    Fry the Potatoes

Carefully add a handful of the dried potato strips to the hot oil, avoiding overcrowding. Fry for about 3-5 minutes, or until golden brown and crispy.

  6. 6

    Drain and Season

Using a slotted spoon, remove the fries from the oil and let them drain on a plate lined with paper towels. Immediately season with salt, pepper, and paprika to taste.

  7. 7

    Serve

Serve the shoestring fries hot as a side dish or snack.
