Mix Ingredients
In a large bowl, combine the ground beef, salt, and black pepper. Mix until just combined, being careful not to overwork the meat.

Form Patties
Divide the mixture into two equal portions and shape each portion into a quarter-pound patty, about ¾ inch thick.

Add Cheese
In the last minute of cooking, place 2 oz of cheddar cheese on each patty to melt.

Cook Bacon
In a separate skillet, cook the bacon slices until crispy. Remove and drain on paper towels.

Prepare Pico de Gallo
If using store-bought pico de gallo, ensure it's well-mixed. If making from scratch, chop tomatoes, onions, cilantro, and jalapeños, and mix with lime juice and salt.

Heat Queso
In a saucepan, gently heat the queso cheese over low heat until warmed through, stirring occasionally.

Build the Burger
Place each patty on a plate. Top each with crispy bacon, a generous scoop of pico de gallo, and pour the warm queso cheese over the top.
