Pulled Pork Preparation

Season the Pork
In a small bowl, mix together the yellow mustard, brown sugar, smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub this mixture all over the pork shoulder.

Cook the Pork
Place the seasoned pork shoulder into a slow cooker. Add water and cover. Cook on low for 8-10 hours or until the pork is tender and easily pulls apart.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix it with barbecue sauce. Allow it to heat through for about 10 minutes.
Coleslaw Preparation

Prepare the Coleslaw
In a large bowl, combine the shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well until all ingredients are combined.

Chill the Coleslaw
Cover the coleslaw and refrigerate for at least 30 minutes to allow the flavors to meld.

Toast the Buns
Lightly toast the hamburger buns on a grill or in a toaster.

Assemble the Sandwich
Place a generous amount of pulled pork on the bottom half of each toasted bun. Top with coleslaw and pickles if desired. Place the top half of the bun on each sandwich.
