Prepare the Vegetables
Slice the onion and bell peppers into thin strips.

Smoke the Prime Rib
If not already smoked, smoke the prime rib for about 2-3 hours at 225°F until it reaches the desired internal temperature. Let it rest before slicing.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the sliced onion, red and green peppers. Season with salt and black pepper. Sauté for about 5-7 minutes, or until the vegetables are tender and slightly caramelized.

Combine Ingredients
Add the sliced smoked prime rib to the skillet with the sautéed vegetables. Stir together and cook for an additional 2-3 minutes until heated through.

Toast the Hoagie Buns
While the meat and vegetables are cooking, preheat your oven to 350°F (175°C). Place the hoagie buns on a baking sheet and toast them in the oven for about 5 minutes or until golden brown.

Assemble the Sandwiches
Once the buns are toasted, layer the smoked prime rib and vegetable mixture onto each hoagie bun. Top with slices of Swiss cheese.

Melt the Cheese
Return the assembled sandwiches to the oven for an additional 2-3 minutes until the cheese is melted.

Remove the sandwiches from the oven, let them cool slightly, then serve hot with your choice of sides.
