Method

Cooking the Pasta

    Boil Water

    In a large pot, bring 4 cups of water to a boil. Add 1 teaspoon of salt to the boiling water.

    Cook Pasta

    Add 2 cups of pasta to the boiling water and cook according to package instructions, usually about 7-10 minutes until al dente.

    Drain Pasta

    Once cooked, drain the pasta in a colander and rinse under cold water to stop the cooking process. Set aside.

Preparing Vegetables

    Chop Vegetables

    While the pasta is cooking, wash and chop the cherry tomatoes, cucumber, bell pepper, and red onion as specified. Combine them in a large mixing bowl.

    Add Olives

    Add 1 cup of sliced olives to the bowl with the chopped vegetables.

Making the Dressing

    Combine Dressing Ingredients

    In a separate bowl, whisk together 1 cup of olive oil, 1/4 cup of red wine vinegar, 2 tablespoons of Dijon mustard, 1 tablespoon of honey, 1 minced garlic clove, 1 teaspoon of salt, and 1 teaspoon of black pepper until well blended.

Combining Salad

    Mix Everything Together

    Add the cooked pasta to the bowl with the vegetables and olives. Pour the dressing over the salad and toss gently until everything is well combined.

    Add Herbs

    Finally, add 1/4 cup each of chopped parsley and basil to the salad and toss again to incorporate the herbs.

    For best flavor, cover the salad and refrigerate for at least 30 minutes before serving.
