    Prepare the Ingredients

    Wash the okra under cold running water and pat dry with a paper towel. Cut the tops off the okra and slice them into 1-inch pieces. Chop the onion, tomatoes, garlic, and green chili finely. Roughly chop the cilantro and set aside.

    In a large pan or skillet, heat the vegetable or olive oil over medium heat until hot.

    Sauté the Aromatics

    Add the cumin seeds to the hot oil and sauté for about 30 seconds until they begin to sizzle. Next, add the chopped onion and sauté for 3-4 minutes until they become translucent.

    Add Garlic and Green Chili

    Stir in the minced garlic and chopped green chili, cooking for an additional 1-2 minutes until fragrant.

    Cook the Tomatoes

    Add the chopped tomatoes to the pan. Cook for about 5 minutes until they soften and break down, stirring occasionally.

    Mix in the turmeric powder, salt, black pepper, and garam masala. Stir well to combine all the ingredients.
