Base Ingredients

Method

Preparing the Potatoes

  1. 1

    Boil the Potatoes

In a large pot, place the potatoes and cover them with water. Add 1 tablespoon of salt. Bring the water to a boil over medium-high heat and cook the potatoes for about 15-20 minutes, or until they are fork-tender.

  2. 2

    Cool and Chop

Once cooked, drain the potatoes and let them cool for about 10 minutes. When cool enough to handle, chop them into bite-sized pieces and set aside.

Making the Dressing

  1. 3

    Combine Ingredients

In a large mixing bowl, combine 1 cup of mayonnaise, 1 cup of sour cream, 2 tablespoons of Dijon mustard, 2 tablespoons of apple cider vinegar, 1 teaspoon of garlic powder, and 1 teaspoon of paprika.

  2. 4

    Season the Dressing

Mix the dressing well and season with salt and black pepper to taste. Adjust seasoning as needed.

Combining Ingredients

  1. 5

    Mix Everything Together

In a large bowl, add the chopped potatoes, crumbled bacon, chopped green onions, shredded cheddar cheese, and chopped hard-boiled eggs.

  2. 6

    Add the Dressing

Pour the prepared dressing over the potato mixture and gently fold everything together until well combined.

Chilling and Serving

  1. 7

    Chill the Salad

Cover the bowl with plastic wrap and refrigerate the loaded potato salad for at least 1 hour before serving to allow the flavors to meld together.

  2. 8

    Serve

Serve chilled as a side dish at your next gathering or barbecue. Enjoy!
