Mac & Cheese Preparation

    Cook the elbow macaroni

    In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the cheese sauce

    In a saucepan over medium heat, melt 2 tablespoons of butter. Stir in 2 tablespoons of flour and cook, stirring constantly, for about 1 minute until lightly golden. Gradually whisk in 1 cup of milk, and cook until the mixture thickens. Stir in 2 cups of shredded cheddar cheese until melted. Add salt and black pepper to taste.

    Combine macaroni and cheese sauce

    Fold the cooked macaroni and diced jalapenos into the cheese sauce until evenly mixed. Allow the mixture to cool, then refrigerate it for at least 30 minutes to firm up.

Coating and Frying

    Set up three shallow bowls: one with 1 cup of flour, one with 2 beaten eggs, and one with 2 cups of breadcrumbs mixed with 1 teaspoon of salt and 1 teaspoon of black pepper.
