    Start by washing the Russet potatoes thoroughly under cold water to remove any dirt. Peel the potatoes using a vegetable peeler, if desired, then cut them into uniform sticks about 1/4 inch thick.

    Place the cut potato sticks in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch, which will help the fries become crispier.

    Dry the Potatoes

    After soaking, drain the water and lay the potato sticks out on a clean kitchen towel or paper towels. Pat them dry thoroughly to remove as much moisture as possible.

    In a large, deep pot or a deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accurate measurement.
