Preparation of Vegetables

    Chop the Cabbage

    Remove any wilted outer leaves from the green and red cabbage. Cut the cabbages in half and remove the core. Slice the cabbage halves into thin strips and then chop them into bite-sized pieces. Measure out 4 cups of green cabbage and 1 cup of red cabbage.

    Grate the Carrots

    Peel the carrots and use a box grater or food processor to grate them finely until you have 1 cup of grated carrots.

    Slice the Green Onions

    Rinse the green onions under cold water. Trim off the roots and slice the green onions thinly, using both the white and green parts.

    Mix the Dressing

    In a large bowl, combine 1 cup of mayonnaise, 2 tablespoons of apple cider vinegar, 1 tablespoon of sugar, 1 teaspoon of salt, and 1 teaspoon of black pepper. Whisk together until smooth and well combined.

Combine and Serve

    Combine Vegetables and Dressing

    Add the chopped green cabbage, grated carrots, red cabbage, and sliced green onions to the dressing in the bowl. Toss everything together until the vegetables are evenly coated with the dressing.
