Brisket Preparation

In a small bowl, mix together salt, black pepper, garlic powder, onion powder, and paprika. Rub the spice mixture all over the beef brisket, ensuring it is evenly coated.

Wrap the seasoned brisket in plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to penetrate the meat.

Smoke the Brisket
Place the brisket in the smoker. Smoke for about 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C). Use a meat thermometer for accuracy.

Once done, remove the brisket from the smoker and let it rest for at least 30 minutes before slicing. This helps the juices redistribute.
