Preparing Tortilla Chips

Cut and Fry Tortillas
Stack the corn tortillas and cut them into quarters. Heat vegetable oil in a large frying pan over medium heat. Once the oil is hot, add tortilla pieces in batches and fry until golden brown and crispy, about 2-3 minutes per batch. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.

Layer Chips and Toppings
On a large baking sheet, spread a single layer of the fried tortilla chips. Evenly distribute the heated brisket and BBQ sauce mixture over the chips. Sprinkle shredded cheddar cheese generously on top, followed by jalapeños.

Melt and Serve
Place the baking sheet under the broiler for 2-3 minutes or until the cheese is melted and bubbly. Remove from the oven, and top with dollops of sour cream and a sprinkle of fresh cilantro. Serve immediately.
