    Prepare the ingredients

    Wash the lettuce thoroughly under cold water and pat dry with a paper towel. Slice the tomato into even slices, about 1/4 inch thick.

    Cook the bacon

    In a large skillet over medium heat, cook the smoked jalapeño bacon until crispy, about 4-5 minutes on each side. Transfer to a paper towel-lined plate to drain excess grease.

    Toast the Texas bread

    In the same skillet, toast the slices of Texas toast until golden brown on both sides, about 2-3 minutes per side. You may need to add a little bacon grease or butter to the pan for better browning.

    Spread the mayonnaise

    Spread 1 tablespoon of mayonnaise on one side of each slice of toasted Texas toast.

    Layer the sandwich

    On two slices of toast (mayonnaise side up), layer the crispy bacon, followed by the lettuce and sliced tomato. Sprinkle with salt and black pepper to taste.

    Finish the sandwich

    Top with the remaining slices of toast, mayonnaise side down, and gently press down to secure the layers.

    Slice the sandwiches in half diagonally and serve immediately while the toast is warm and crispy.
