    Soak the Beans

    Rinse the dried navy beans under cold water. Place them in a large bowl and cover with water. Let them soak overnight or for at least 8 hours.

    Drain and Rinse

    After soaking, drain the beans and rinse them again under cold water.

Cooking

    Cook the Beans

    In a large pot, add the soaked beans and cover them with 3 cups of vegetable broth. Bring to a boil, then reduce heat to low and let simmer for about 1 hour or until the beans are tender.

    Prepare the Sauce

    In a large mixing bowl, combine ketchup, brown sugar, mustard, Worcestershire sauce, salt, black pepper, and smoked paprika. Mix well until fully combined.

    Sauté the Vegetables

    In a skillet over medium heat, add a splash of olive oil and sauté the diced onion, minced garlic, and diced bell pepper until they are soft, about 5-7 minutes.

    Combine Ingredients

    Once the beans are cooked and tender, add the sautéed vegetables to the pot with the beans. Then add the sauce mixture and stir everything together.

    Bake

    Preheat the oven to 350°F (175°C). Transfer the bean mixture into a baking dish and cover with foil. Bake in the preheated oven for 45 minutes. Remove the foil for the last 15 minutes to allow the top to caramelize slightly.

    If desired, sprinkle chopped bacon and parsley on top before serving. Serve hot as a side dish or main course.
