Preparation Steps
Roasting the Beets
Preheat the oven to 400°F (200°C). Wash the beets thoroughly, then wrap each beet in aluminum foil. Place them on a baking sheet and roast for 45-60 minutes, or until they are tender when pierced with a fork.
Prepare the Topping
While the beets are roasting, prepare the candied walnuts by chopping them coarsely. In a small bowl, mix the chopped walnuts with a drizzle of balsamic vinegar and a pinch of salt. Set aside.
Assemble the Dish
Once the beets are done roasting, let them cool slightly. Peel the skins off (they should come off easily) and slice them into wedges. Arrange the beet wedges on a serving platter.
Garnish
Crumble the goat cheese over the roasted beets. Sprinkle the candied walnuts on top, followed by a drizzle of olive oil, salt, black pepper, and fresh thyme for garnish.
Serve
Serve the roasted beets warm or at room temperature as a delicious side dish or appetizer.
