Method

Preparing the Pork Chops

Marinate the Pork Chops

In a bowl, mix olive oil, salt, black pepper, cumin, and oregano. Rub this mixture all over the pork chops and let them marinate for at least 30 minutes.

Grill the Pork Chops

Preheat the grill to medium-high heat. Grill the marinated pork chops for about 6-7 minutes on each side, or until they reach an internal temperature of 145°F.

Making the Adobo Sauce

Blend the Sauce

In a blender, combine chipotle peppers, garlic, lime juice, honey, and soy sauce. Blend until smooth and set aside.

Preparing the Mashed Potatoes

Cook the Potatoes

Peel and chop the potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot.

Mash the Potatoes

Add butter and heavy cream to the potatoes. Mash until smooth and season with salt and black pepper to taste.

Grilling the Pineapple

Prepare and Grill the Pineapple

Sprinkle brown sugar and cinnamon over pineapple slices. Grill for about 3-4 minutes on each side until caramelized.
