Roasting the Potatoes

Preheat your oven to 425°F (220°C). Toss the diced potatoes with olive oil, paprika, thyme, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, until golden and crispy.

Preparing the Burger Patties

In a large bowl, mash the black beans with a fork until mostly smooth. Add the oats, chopped onion, minced garlic, grated carrot, cumin, salt, and black pepper. Mix until well combined. Form the mixture into 4 burger patties.

Cooking the Patties

Heat olive oil in a skillet over medium heat. Cook the burger patties for about 5-6 minutes on each side, or until they are crispy and browned.

Assembling the Burger

Toast the whole grain burger buns. Spread Dijon mustard and ketchup on the bottom bun, place the cooked burger patty on top, and add lettuce, tomato, and onion as desired. Top with the other half of the bun.

Serving

Serve the vegan burgers hot with roasted potatoes on the side.
