Prepare the Pesto

In a food processor, combine basil leaves, pine nuts, garlic, parmesan cheese, and olive oil. Blend until smooth. Season with salt and black pepper to taste.

Cook the Pasta

Bring a large pot of salted water to a boil. Add linguini and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Sauté the Vegetables

In a large skillet, heat a tablespoon of olive oil over medium heat. Add diced squash and zucchini, and sauté for about 5 minutes until they start to soften. Add the cherry tomatoes and cook for another 2-3 minutes.

Cook the Shrimp (if using)

If using NC shrimp, add them to the skillet with the vegetables and cook until they turn pink and opaque, about 3-5 minutes.

Combine and Serve

Add the cooked linguini to the skillet with the vegetables (and shrimp, if using). Pour in the pesto and toss everything together, adding reserved pasta water as needed to create a creamy sauce. Serve hot.
