Prepare the Chimichurri

In a food processor, combine parsley, garlic, red wine vinegar, red pepper flakes, and oregano. Pulse until finely chopped. Slowly drizzle in olive oil while processing until well combined. Season with salt to taste.

Prepare the Steak

Rub the hanger steak with olive oil, salt, and black pepper. Let it sit at room temperature for about 30 minutes.

Cook the Steak

Preheat a grill or skillet over high heat. Cook the hanger steak for about 4-5 minutes on each side for medium-rare, depending on thickness. Use a meat thermometer to check for an internal temperature of 130°F (54°C).

Rest the Steak

Remove the steak from the heat and let it rest for 10 minutes before slicing.

Serve

Slice the steak against the grain and serve with chimichurri sauce drizzled on top.
