Fried Cornmeal with Prosciutto di Parma

Method

Preparation Steps

  1. 1

    Prepare the Cornmeal

In a large pot, bring the water to a boil. Add the salt and gradually whisk in the cornmeal, stirring constantly to prevent lumps. Cook the mixture over medium heat for about 15-20 minutes until thickened, stirring frequently.

  2. 2

    Cool the Mixture

Once thickened, pour the cornmeal mixture into a greased baking dish, spreading it evenly. Allow it to cool completely and set, about 30 minutes.

  3. 3

    Cut and Fry

Once set, cut the cornmeal into squares or triangles. In a large skillet, heat the olive oil over medium-high heat. Fry the cornmeal pieces until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

  4. 4

    Serve

Arrange the fried cornmeal on a serving platter. Top with slices of Prosciutto di Parma, sprinkle with fresh parsley and black pepper to taste. Serve warm.
