Cook the Ziti
Bring a large pot of salted water to a boil. Add the ziti pasta and cook according to package instructions until al dente. Drain and set aside.
Sauté the Shrimp
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
Make the Cream Sauce
In the same skillet, add the Vin Santo wine and bring to a simmer. Let it reduce for about 5 minutes. Then, stir in the heavy cream and cook for an additional 5 minutes, stirring frequently until the sauce thickens slightly.
Combine Ingredients
Add the cooked ziti and sautéed shrimp to the cream sauce. Toss to coat the pasta and shrimp evenly. Stir in the grated Parmesan cheese and season with salt and black pepper to taste.
Serve
