Cooking Instructions
Prepare the Pappardelle
Bring a large pot of salted water to a boil. Add the pappardelle pasta and cook according to package instructions until al dente. Drain and set aside.
Make the Veal Ragu
In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté until the vegetables are softened, about 5-7 minutes.
Add Garlic and Veal
Stir in the minced garlic and cook for an additional minute. Add the ground veal, breaking it up with a spoon, and cook until browned all over, about 8-10 minutes.
Incorporate Tomatoes and Wine
Pour in the diced tomatoes and red wine. Stir to combine and bring to a simmer.
Simmer the Ragu
Add the beef broth, chopped basil, salt, and black pepper. Reduce the heat to low and let the sauce simmer for about 30 minutes, stirring occasionally.
Combine and Serve
Toss the cooked pappardelle with the veal ragu until well combined. Serve hot, topped with grated Parmesan cheese and additional fresh basil if desired.
