    Prepare the Octopus

    Clean the octopus under cold running water and remove the beak and ink sac. Cut it into manageable pieces.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add minced garlic and chopped onion, and sauté until the onion is translucent.

    Add Tomatoes and Wine

    Stir in the chopped tomatoes and red wine, and bring to a simmer.

    Add Octopus and Bay Leaves

    Add the octopus pieces and bay leaves to the pot. Season with salt and black pepper.

    Cover the pot and reduce the heat to low. Allow the octopus to braise for about 1.5 to 2 hours, or until tender.
