Gnocchi Preparation

    Make the Gnocchi Dough

    In a large bowl, combine the ricotta cheese, egg, salt, and black pepper. Mix until smooth. Gradually add the flour, mixing with a fork or your hands until a soft dough forms. Be careful not to overwork the dough.

    Shape the Gnocchi

    Divide the dough into 4 pieces. On a lightly floured surface, roll each piece into a long rope about 1/2 inch thick. Cut the ropes into 1-inch pieces. Optionally, use a fork to create ridges on each piece.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the top, about 2-4 minutes. Remove with a slotted spoon and set aside.

    Prepare the Tomato and Shiso Sauce

    In a skillet, heat olive oil over medium heat. Add chopped tomatoes and cook until softened, about 5 minutes. Stir in chopped shiso leaves and season with salt and pepper. Cook for an additional minute.

    Add the cooked gnocchi to the skillet with the tomato and shiso sauce. Toss gently to combine. Serve warm.
