Prepare the Filling
In a mixing bowl, combine the crab meat, green curry paste, finely chopped lemongrass, minced garlic, grated ginger, chopped green onions, soy sauce, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Fill the Gyoza Wrappers
Take a gyoza wrapper and place about a teaspoon of the filling in the center. Moisten the edges with water, fold the wrapper in half, and pinch the edges to seal. You can create pleats for a decorative touch.

Cook the Gyoza
Heat a non-stick skillet over medium heat and add a little oil. Place the gyoza in the skillet and cook for about 2-3 minutes until the bottoms are golden brown. Carefully add a small amount of water (about 1/4 cup) to the skillet and cover immediately. Allow the gyoza to steam for another 5 minutes or until the water has evaporated.

Serve
Remove the gyoza from the skillet and serve hot with dipping sauce of your choice.
